Australia - Have been to ALL eastern costal line capital cities

One of my favorite cities in Australia, a city that combines Wenzhou, Amoy and Chongqing (as an improper analague). In general nice weather throughout the year. "Paradise" for not only surfers, but also travellers and valentines, for its uniquely beautiful and enjoying attractions, zoos, botanic gardens and themed parks. Long and enjoying beach scenaries in gold coast. Traffic conditions are absolutely wonderful and unique, as one can take a boat in the city and travel around, and can experience the highest speed train in Australia from South Brisbane to Helensvale. Quiet at nights. Extremely beautiful night scenaries in Brisbane city. Cheap and lovely dishes in South Bank and the Gold Coast Chinatown. Lovely shopping experiences in the Pacific Shopping Centre in Gold Coast. University of Queensland, in my opinion, has the most beautiful campus accross Australian universities and is definetly a good place to research and study at. Museums are enriching and worth a visit. 

 

Sudden rains and hails expected in summer. World-famous dangerous teenagers and nights. So be careful while enjoying the night scenes. Please kindly note that although beaches and sea there are beautiful, but they can also be dangerous if you are swimming, diving or surfing without any protection

Singapore - Have been in Singapore for 3 days

A multi-cutural country-city with many feasts and activities. Merlion is the symbol of the city and Sentosa is the island you do not want to forget to visit. Do watch the night scenes at the Marina Bay (Gardens by the Bay), and I suggest with your lovers and friends to do so, it is beautiful and romantic. Transport is so convenient and affordable in Singapore, with its train network expanding to every corner of the island and well developed highway network. Changi Airport is just so good with shopping centres, waterfalls and luxury restrooms able to take a full bath! You just can't believe it that an airport itself is an attraction! You would sincerely love to taste their food in food courts, which is also a lovely place in Singapore. Universities in Singapore are just fabulous. The city in general is clean, safe and enjoyable. 

Nevertheless, the city is a bit too hot and humid throughout the year. You are expected to sweatering by just few walks away. The rules are strict - you cannot bring even gums into the city and you will be sentenced to death no matter how much drug you bring with you on caught. For people planning to stay for longer it might be a dull place due to it is just an island - but not an issue for me and am planning to visit the next time after COVID restrictions. 

China - Have been to multiple famous cities and attractions

A multi-cutural city with many feasts and activities. With the world-famous West Lake, scenaries in Hangzhou is undoubtably beautiful. The climate is generally enjoying. Every fall due to the boost of osmanthus, it is just pleasant no matter where you are in the city. There are plenty choices of nice dishes accross the city, some famous ones including the Dongpo sweet-saused pork loin chops (see below in cooking session on how to cook it), vinigared West-Lake fish, Fried tofu bar with pork and spring onion inside, Shengjian Mantou and of course, the famous Longjing Green tea. The city has a history for more than 5,000 years since Liangzhu, and has many Hamlet style loving stories including Legend of the White Snake, The Little Su, and more recently, Chinese Paladin (The Legend of Sword and Fairy, Series I).  Traffic, eating and living costs are generally affordable. Since the complete of few metro trains, travelling in Hangzhou is amazingly efficient. Places in Jiande, near the West Lake and Lingyin Temple are lovely to stay.

Extremely crowded sometimes especially each holiday. Some places are noisy at night and hard to fall asleep, so carefully choose where you sleep. The airport and the high-speed railway station are just ridiculously far from the major part of the city. Humid, hot and intolerable in summer times and a bit too cold and foggy in winter.

Fried Pork Pieces with Rice Noodles

Sweet Saused Pork Chops
​家常红烧肉

  1. Prepare pork leg or pork loin, vegetables you like (I choose cabbages and tomatoes), white wine, soy-sause, salt, eggs and plain flavor. 

  2. Put an egg and 100g flavor in 2 seperate bowls, and cut the pork pieces as thin as possible. Then use a chopsticks to scatter the egg. 

  3. Deal with the cut pork: Use white wine, salt and soy-sause to dip the cut pieces for about 15 minutes to get rid of the strage smell. 

  4. Mix the pork pieces with the scattered egg and then the flavor, for each bowl of noodle it is suggested that you use 10 pieces of pork. 

  5. Fry the mixture in a pan, for each side about 4 minutes. Then take the fried pork pieces out and put them aside.

  6. Boil the rice noodles while cutting up the vegetables.

  7. Put the cut vegetables into the boiling noodle. 

  8. Put the fried pork pices into the boiling noodle and vegetables when they are nearly done, then cook for another minute and you can wait till the dish cools down and enjoy! 

  1. Prepare a big whole pork leg or pork loin, vegetables you like (I choose Shanghai Green Choy usually), crystal sugar, white wine, salt, bean-sause oil, vinigar, green oinions and ginger pieces. 

  2. Deal the whole loin with salt and white wine for 15 minutes to get rid of its disgusting smell.

  3. Pour the dealt liquid, and boil the salted and wined pork meat with green onions and ginger pieces (4 pc. for every 500g) for 20 minutes.

  4. Take the meat out and use a pan to oil-fry each side, the whole process takes about 10 minutes. Do not forget to put salt in the pan to prevent oil liquids from splashing.

  5. Take out the pork and put it into a rice cooker, add crystal sugar (based on your taste), ginger, only a little soy sause and vinigar. Then start cooking use the "cook rice" mode.

  6. While finished, cut the meat into chops and put it into the rice cooker to cook again under the same mode. This time add some water and some bean-sause oil.

  7. Wait till it is cooked and cooled down.

  8. Stir-fry the vegetables and mix with the pork, then enjoy the sweet saused pork chops!
